Fancy Italian Restaurant Salad 2I was thinking to name this salad as “Sweet Potato and Yellow Beans Salad” but it was too long and boring, so I decided to name it as Fancy Italian Restaurant Salad because it looks like something they can serve you in that fancy Italian restaurant of yours, that place where you would like to go with your partner but never dare because you are too scared to live. 

But worry not, my lickle friend, I’m bringing that Fancy Italian Restaurant Salad to your kitchen so you can make it to your love as a starter, before having a nice dish of pasta or a great homemade pizza. 

How to make a Fancy Italian Restaurant Salad

Ingredients (Serves 2 as a starter):

1 sweet potato
Some yellow or green beans
1 red, yellow or orange pepper
Mozzarella balls
Balsamic vinegar glaze
Extra Virgin Olive Oil
Salt & black pepper to taste 


Let’s start by roasting the sweet potato and the peppers. Preheat your oven at 180 C. Peel your tuner and cut it in 1 cm slices. Toss them with some olive oil, salt, pepper and oregano and place them in a tray. Prepare and roast your pepper as we did for the Escalivada. The sweet potato will take 30 minutes, while the pepper will need 45-60 minutes to be roasted. 

After those 30 minutes, check the sweet potato. If it’s soft, it’s ready. Turn the pepper and cook it for further 30 minutes on the other side. Once this time is gone, put it in an airtight container and leave it to rest and sweat for 20 minutes. Peel it and cut it in stripes. 

If your beans are frozen, cook them following the producer’s instructions.

If they are fresh, blanch them in boiling salty water for 2 minutes. Stop the cooking by putting them in a bowl of cold water after that time. 

The Balsamic Glaze Vinaigrette

Put a tablespoon of balsamic vinegar glaze in a bowl with some salt and black pepper. Stir. Add 3 tablespoons of nice olive oil and stir energetically until everything is well mixed.

Final steps

Put the rocket in a plate or bowl, add the sweet potato, pepper and beans in a nice way, top with 4 or 5 mozzarella balls and finish with your lovely vinaigrette. 

Serve immediately and enjoy it. Salud!
