This Warm Tortellini Salad is perfect for those who are tired of their usual pasta salads. I never thought of a salad with tortellini or ravioli but, apparently, this is something frequent in USA and if they can do it, so do you!
If you have some tortellini left in the fridge from a previous meal and want to give them a second life, you will only need to fry some bacon and the artichoke hearts to have a quick and tasty salad. If not, use your favourite tortellini.
How to make a Warm Tortellini Salad
Ingredients (serves 2):
A bunch of Spinach & Ricotta Tortellini
6 artichoke hearts in brine
Some bacon lardons
Your favourite green leaves
Extra Virgin Olive Oil
Salt & black pepper to taste
Boil your tortellini following the instructions of the producer. Once they are cooked, cool them down under the stream of the tap. Set them aside.
Fry the bacon lardons with some drops of oil if necessary. If they are naturally fatty you won’t need any oil. Fry them until they are nicely golden brown and crispy.
Drain the artichoke hearts and rinse them. Cut them in quarters and fry them in the same oil/fat from the lardons for few minutes, enough to crisp the edges.
Wash your favourite green leaves and dry them as much as possible. Put them in a big bowl and drizzle with some nice olive oil, a good vinegar and salt & pepper to taste.
Put the leaves in the plates, add the tortellini, the lardons and the artichoke hearts and serve.
